Our 4th Annual LAST MINUTE RECIPE™ was almost too late!
In January we started working on a kitchen re-do for our covid escape house, joking that our only real deadline would be Thanksgiving. HA on us!
Easier than pie
This recipe is made with few ingredients that you might already have on hand this time of year. And like a good munchie does, these spiced pecans really get the appetite cranking!
2 cups whole pecans
1/2 cup sugar
3/4 tsp. salt
1 tsp. cinnamon (or pie spice)
3/4 tsp. nutmeg
1 egg white
2 Tbs. water
Preheat oven to 300 degrees and grease a sheet pan lined with parchment paper.
In a medium bowl, mix sugar, salt, and spices.
In a small bowl, lightly beat egg white and water before stirring into sugar mixture.
Add nuts. Stir to coat thoroughly.
Spoon nuts onto prepared sheet pan, thus leaving excess sugar in the bottom of the bowl.
Bake for 30 minutes. Cool completely before breaking apart and snacking!
